For Onion Gravy:

Onions, thinly sliced

Beef stock

Salt and pepper, to taste
Cooking Instructions:
For the Mash:
Boil potatoes in salted water until tender (about 15-20 minutes).
Drain and mash with butter and milk. Season with salt and pepper. Keep warm.
For the Sausages:
Fry sausages in a pan over medium heat until browned and cooked through (about 15-20 minutes). Set aside and keep warm.
For the Onion Gravy:
In the same pan, melt butter and add onions. Cook until soft.
Sprinkle flour over onions and stir for a minute.
Gradually add beef stock, stirring continuously.
Add Worcestershire sauce, salt, and pepper. Simmer until the gravy thickens.
To Serve:
Serve sausages over a bed of mashed potatoes with a generous helping of onion gravy.
Notes:
For a vegetarian version, use meat-free sausages and vegetable stock for the gravy.
