Description:

Beef Wellington is a classic British dish that consists of a tender beef fillet (usually coated with a layer of mushroom duxelles and sometimes wrapped in Parma ham), all encased in puff pastry. The pastry-wrapped beef is baked to perfection, creating a deliciously crispy and golden exterior while keeping the meat moist and flavorful. It is often served with a rich mushroom sauce or a red wine reduction, making it a luxurious and savory culinary delight, often reserved for special occasions.

Salt and pepper, to taste

Cooking Instructions:

Prepare the Beef:
Season the beef fillet with salt and pepper.
In a frying pan, heat the olive oil and sear the beef on all sides.
Brush the beef with English mustard and let it cool.
Mushroom Duxelles:
In the same pan, melt butter and add the finely chopped mushrooms and thyme.
Cook until the mushrooms release their moisture and it evaporates.
Season with salt and pepper, then cool.
Assemble the Wellington:
Lay out the prosciutto on cling film, slightly overlapping.
Spread the mushroom duxelles over the prosciutto.
Place the cooled beef in the center and roll tightly using the cling film. Chill for 15 minutes.
Pastry:
Roll out the puff pastry on a floured surface.
Unwrap the beef from the cling film and place it in the center of the pastry.
Fold the pastry over the beef, seal the edges, and trim any excess.
Brush with beaten egg yolk.
Bake:
Preheat your oven to 200°C (400°F).
Place the Wellington on a baking tray and bake for 20-25 minutes for medium-rare.
Rest and Serve:
Let the Wellington rest for 10 minutes before slicing.
Serve with your choice of sides, such as roasted vegetables or a rich gravy.
