Cooking Instructions:
Combine Vegetables:
In a large bowl, mix together the mashed potatoes, chopped cabbage, and onion. Season with salt and pepper to taste.
Heat the Pan:
Place a large, non-stick frying pan over medium heat and add the vegetable oil.
Form Patties:
Once the oil is hot, form the potato and cabbage mixture into patties.
Cook Patties:
Place the patties in the pan, pressing down slightly. Cook for about 15 minutes on one side, or until golden brown and crispy.
Flip:
Carefully flip the patties and cook for another 15 minutes on the other side.
Rest:
Once cooked, let the patties rest in the pan for 5 minutes to settle.
To Serve:
Serve hot, straight from the pan. Bubble and Squeak pairs wonderfully with cold cuts of meat or as a hearty vegetarian dish on its own.
Notes:
Feel free to add other leftover vegetables such as carrots or peas.
For a non-vegetarian twist, mix in some chopped cooked bacon.
