Description:

The Cornish Pasty, a classic British pastry, is a delightful parcel of flaky pastry filled with beef, vegetables, and seasonings. Originating from Cornwall, this dish was traditionally a hearty meal for miners.

Ingredients:

Servings

500
plain flour
125
unsalted butter, chilled
125
lard, chilled

Cold water
350
beef skirt, finely chopped
200
potato, diced
150
swede (rutabaga), diced
100
onion, finely chopped

Salt and pepper to taste
1

egg, beaten for glazing

Cooking Instructions:

Make Pastry:
Sift the flour into a large bowl. Rub in the butter and lard until the mixture resembles fine breadcrumbs. Add cold water, a little at a time, to form a firm dough. Wrap in cling film and chill for 30 minutes.
Prepare Filling:
Mix the beef, potato, swede, onion, salt, and pepper in a bowl.
Assemble Pasties:
Preheat the oven to 180°C (350°F). Roll out the pastry on a floured surface to about 3mm thick. Cut out 4 circles using a plate as a guide. Divide the filling among the pastry circles, placing it to one side. Brush the edges with water, fold over, and crimp the edges to seal.
Bake:
Place the pasties on a baking tray lined with parchment paper. Brush with beaten egg. Bake for 45 minutes to 1 hour, until golden.
Rest:
Let the pasties cool for 10 minutes before serving.

To Serve:

Serve warm with a side salad or simply enjoy as a standalone dish.

Notes:

The traditional Cornish Pasty uses swede, but turnips can be substituted.
Handle the pastry as little as possible to keep it flaky.
