Description:

Eton Mess is a quintessentially British dessert, known for its delightful combination of crunchy meringues, rich whipped cream, and fresh strawberries. It's a celebratory dish often associated with Eton College and is particularly enjoyable during the warmer months when strawberries are in season.

Cooking Instructions:

Meringues:
Preheat the oven to 120°C (250°F). Line a baking sheet with parchment paper.
In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add caster sugar, beating continuously until the mixture is glossy and stiff. Gently fold in the vinegar.
Spoon dollops of the meringue mixture onto the baking sheet. Bake for 1.5 to 2 hours until crisp and dry. Leave to cool completely.
Whipped Cream:
In a bowl, whip the double cream with icing sugar until soft peaks form.
Assembly:
Roughly crush the meringues and gently fold them into the whipped cream, maintaining a chunky texture. Add the halved strawberries, reserving some for garnish.

To Serve:

Divide the mixture into serving bowls. Garnish with reserved strawberries and optional mint leaves.

Notes:

Adjust the sugar in the cream to taste.
You can use store-bought meringues to save time.
