Description:

Spotted Dick is a quintessentially British steamed pudding, dotted with currants or raisins, creating a 'spotted' appearance. It's often served with custard and is a comforting, hearty dessert perfect for colder months.

Ingredients:

Servings

250
self-raising flour
125
shredded suet
90
caster sugar
150
currants or raisins
1

lemon zest
150
ml
milk

Pinch of salt

Cooking Instructions:

Mix Dry Ingredients:
In a large bowl, combine flour, suet, sugar, currants (or raisins), lemon zest, and a pinch of salt.
Add Milk:
Gradually add milk to form a soft, sticky dough.
Shape the Pudding:
Turn the dough onto a floured surface and shape into a log.
Prepare for Steaming:
Wrap the log in a piece of buttered baking parchment, then cover it with foil, twisting the ends to seal.
Steam the Pudding:
Place the wrapped pudding into a steamer over boiling water. Steam for 1.5 hours, ensuring the pan doesn’t run dry.
Resting:
Let the pudding rest for 10 minutes after steaming.

To Serve:

Serve warm, sliced, accompanied by custard or cream.

Notes:

If you don’t have a steamer, use a large pan with an upturned heatproof saucer on the bottom.
Vegetarian suet can be used as a substitute.
