Cooking Instructions:
Preheat the oven as per the meat's requirements.
Season the meat with salt, pepper, and olive oil. Place in a roasting tin, adding the garlic bulb.
Roast the meat according to its weight (e.g., beef rib - 20 minutes per 450g plus 20 minutes).
For the vegetables:
Toss the potatoes, carrots, and Brussels sprouts in olive oil, salt, and pepper. Roast in the oven for the last 45 minutes of the meat's cooking time.
Yorkshire Pudding:
Combine flour, eggs, and milk to make a smooth batter. In a muffin tin, add a little oil to each section and heat in the oven. Pour the batter into the hot tin and bake for 20-25 minutes until risen and golden.
Rest the meat for 20-30 minutes after roasting.
Gravy:
Mix flour into the meat juices, add stock, and simmer until thickened.
To Serve:
Carve the meat and serve with the roasted vegetables, Yorkshire puddings, and gravy.
