120
g
plain flour, plus extra for dusting

tsp
baking powder
150
ml
cold beer
150
ml
sparkling water
Sea salt and freshly ground black pepper
Vegetable oil, for deep frying
Lemon wedges, to serve
Tartare sauce, to serve
Cooking Instructions:
Prepare the Chips:
Cut the potatoes into thick chips. Rinse under cold water and pat dry with kitchen paper.
Heat the Oil:
Fill a deep fryer or large saucepan one-third full with vegetable oil. Heat to 180°C.
Batter the Fish:
In a bowl, sift together flour and baking powder. Season with salt and pepper. Gradually mix in the beer and sparkling water to form a smooth, thick batter.
Fry the Chips:
Fry the chips for 4-5 minutes until soft but not coloured. Remove and drain.
Dust the Fish:
Lightly dust the fish fillets with flour. Dip into the batter to coat completely.
Fry the Fish:
Carefully lower each fillet into the hot oil. Fry for 5-6 minutes until golden and crisp. Drain on kitchen paper.
Finish the Chips:
Increase the oil temperature. Return the chips to the fryer and cook until golden and crisp.
Drain:
Remove the chips, drain, and season with salt.
To Serve:
Serve the fish and chips hot with lemon wedges and tartare sauce. Peas or mushy peas are also a traditional accompaniment.
Notes:
Ensure the oil returns to the correct temperature between batches to avoid soggy batter.
Beer can be substituted with sparkling water for a non-alcoholic version.
